In America, a cookie is described as a thin, sweet, usually small cake. By definition, a cookie can be any of a variety of hand-held, flour-based sweet cakes, either crisp or soft. The name cookie is derived from the Dutch word koekje, meaning “small or little cake.”
According to culinary historians, the first historic record of cookies was their use as test cakes. A small amount of cake batter was baked to test the oven temperature.

My chocolate chip cookies are the perfect blend of chewy, crispy, buttery, chocolatey, goodness. I use a combination of cake and bread flours along with Ghirardelli bittersweet chocolate. Each cookie is over 4" in diameter.

Italian Cannoli Cookies
These Italian Cannoli Cookies combine all the ingredients and flavors you would expect from a cannoli into a cookie! Ricotta cheese, mini chocolate chips, pistachios, amaretto and citrus flavors explode in your mouth – topped off with a dark chocolate drizzle and sprinkles. It’s the Fiori di Sicilia extract that makes them special. The end result is a light and tender- almost like a moist cake crumb. Delicious and great to give as a gift!

PFEFFERNUSSE COOKIES (GERMAN PEPPER NUTS)
Pfeffernusse cookies, German for "pepper nut," are named for the pinch of pepper added to the dough before baking. It joins a quartet of warm spices -- cinnamon, nutmeg, allspice, and cloves and is popular as a holiday treat. These cookies do not contain nuts and they freeze well!

Mandelhörnchen, German for almond horns, are a naturally gluten-free sweet treat made out of HOMEMADE marzipan, almond meal and sugar, then rolled in almond flakes and the two ends dipped in chocolate. Popular throughout Germany, you can find them in many bakeries. Delicious with coffee or any time of day!
